Lemon Cake
When life gives you lemons, make a lemon cake!
Equipment
- Cake tin
ingredients
Lemon loaf
- 60 g agave syrup
- 120 g greek (soy) yoghurt
- 3 eggs
- ½ tsp vanilla
- 5 ml liquid sweetener
- 115 g (soy) butter (melted) (or vegetable oil)
- 2 zest of lemons
- 2 tbsp lemon juice
- 100 g oat flour
- 100 g self-rising flour
- 2 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
Lemon icing
- 2 tbsp honey
- 1 tbsp lemon juice
- 3 tbsp yoghurt
instructions
- Preheat the oven at 160°C.
- Mix together the gave syrup, yoghurt, eggs, vanilla extract, liquid sweetener and butter.
- Add the zest, lemon juice, oat flour, self-rising flour, baking powder, baking soda, salt and mix it
- Put the mixture in a cake tin and bake for 50 – 60 minutes.
- Mix together the ingredients for the topping and spread it on top before serving.
