Orzo Rosso

An easy pasta recipe made out of sun-dried tomatoes, basil and roasted bell pepper!

And it can be made with just one pan and a blender!

  • Blender
  • saucepan

Orzo

  • 300 g orzo
  • 800 ml water
  • 1 pinch salt

Sauce

  • 15 g basil
  • 30 g Parmesan
  • 200 g roasted red bell pepper
  • 90 g sun-dried tomatoes
  • 15 g pinenuts
  • 2 cloves garlic
  • 1 shallot
  • 150 ml pasta water ((water from the pasta))
  • 400 g diced tomatoes
  • ½ red pepper ((optional))
  • 70 g chorizo ((optional))
  1. Bring the water to the boil with a little salt in a saucepan. Add the orzo and cook for about 8 minutes.

  2. In a blender, blend the Parmesan, roasted bell pepper, sun-dried tomatoes, pine nuts , garlic, oil, red pepper, shallot and pasta water.

  3. Add the sauce, tomatoes and basil to the orzo and fry for 2 minutes.

  4. Cut the chorizo in small cubes and fry till crispy.

  5. Serve the orzo with buratta and cherry tomatoes.

Vegan: leave out the Parmesan and buratta.

Seasoning: add salt & pepper
